How to make masala dosa

STEP 1

Make the dough and let it ferment overnight.
Masala Dosa is one of the most popular South Indian dishes. To prepare the masala dosa batter, wash the rice (with fenugreek) and urad dal and soak them in separate containers for about 6-8 hours. Once the rice and urad dal are well soaked, grind them separately in a blender along with the soaking water until the mixture has a smooth consistency. Mix both ingredients in a large container and add salt. Mix well and let ferment overnight.

Step 2

Prepare potato stuffing for masala dosa
To prepare the dosa filling, heat 2 tablespoons of oil in a heavy-based pan and sprinkle with mustard seeds. Next, add sliced onions, curry leaves and green chillies and fry until the onions turn pink. Next, add a pinch of salt and turmeric powder and mix well. Next, add the diced potatoes to the sautéed onions and mix. Gradually pour water into the mixture and boil the potatoes for about 4 minutes. When the mixture becomes semi-solid, turn off the gas and let it stand for a few seconds.
